Dad's Crockpot Roast

No not my dad, but Lisa Lauchners dad apparently made this one.  I made this for my family this past Sunday and it was a hit.  Yummy Yummy.


1 beef roast (chuck, bottom, etc)
1 pkg brown gravy mix
1 pkg dry Ranch dressing mix
1 pkg dry Italian dressing mix
1 cup water


Place the beef roast in the crockpot.  Mix together the gravy and dressing mixes with the water.  Pour over the roast.  Cook on low 8-10 hours.  Serve and Enjoy!

Sour Cream Enchiladas

1 lb. hamburger or chicken
10-12 tortilla shells
1 (16oz) container sour cream
2 cans cream of chicken soup
Pace picante sauce
1-2 cans chopped green chilies
2-3 cups shredded cheddar cheese
milk


In a skillet, brown meat until cooked thoroughly.  Season with pace picante sauce to taste.  In a sauce pan, combine soup and sour cream.  Add milk to thin out sauce until desired consistency.  Stir occasionally so that the sauce does not stick to the bottom of the pan.  Take torillas and lay on the counter.  On tortilla layer meat, green chilis, and cheese.  Roll up torillas and place in a 9x13 pan.  Put remaining chilies in sauce and about 3 T of picante sauce.  Stir them into the sauce.  Pour the sauce over the tortillas making sure to cover them completely.  Sprinkle cheddar cheese over the top of the torillas.  Cover dish with foil and cook for 45 minutes at 350 degrees.

Olive Garden Salad Dressing

1/2 cup mayonnaise
1/3 cup white vinegar
1 tsp. vegetable oil
2 Tbsp. corn syrup
2 Tbsp. Parmesan cheese
2 Tbsp.Romano cheese
1/4 tsp garlic salt OR 1 clove garlic
1/2 tsp Italian seasoning
1/2 tsp. parsley flakes
1 Tbsp. Lemon juice
sugar (optional)


Mix all ingredients in a blender until well mixed.  If this a little tart for your taste, add a bit of sugar.

Grape Salad

2 lbs.  seedless red grapes
2 lbs.  seedless green grapes
8 oz sour cream
8 oz cream cheese, softened
1/2 cup sugar
1 tsp vanilla
1 cup brown sugar
1 cup pecans
1/2 cup butter


Mix sour cream, cream cheese, sugar, and vanilla.  Pour over grapes and toss.  Refrigerate.  Place butter on a sheet pan and melt in the oven.  Mix pecans with butter on the pan.  Toast for 10-15 minutes at 325.  Sprinkle the brown sugar over the pecans and place back in the oven until brown sugar softens.  Cool the pecan mixture on wire rack (about 30 minutes).  Place pecan mixture in ziploc bag and beat into small pieces.  Sprinkle over the grape mixture and refrigerate overnight.

Grams' Vegetable Beef Soup

This recipe is amazing.  It is one that my Gramps use to make quite a bit for our family!  I love and miss my Grams very much but glad to be able to share some of the amazing things that happened in her kitchen.

Recipe from Delma Martin (My Grams)


1 1/2 lbs stew beef (cut into cubed pieces)
2 bags frozen small butter beans
1 1/2 lbs potatoes (peeled and cubed)
1 bag frozen white corn
2 cans whole tomatoes
1 large onion
1/2 bunch of celery stalks


Simmer beef in about 1 quart of water on medium heat.  Blend tomatoes in a blender, then add to meat.  Simmer about and hour.  Add butter beans, potatoes, celery, and onions.  Simmer for 30 minutes.  Add corn Simmer another 15 minutes.  Enjoy!

Stuffed Mushrooms

8-16 oz. mushrooms
1/2 cup finely diced onion
4 oz. cream cheese
garlic salt to taste
Bacon bits to equal 4-5 pieces of bacon
melted margarine or butter


Remove stems from mushrooms.  Then brush clean with brush or paper towel.  In measuring cup cook onions in microwave with about 1 Tbsp. butter or margarine until onions are soft.  Add cream cheese, bacon bits, and  garlic salt.  Fill mushrooms then pour melted butter on.  Place half the mushrooms on a 9" microwave proof baking dish, stuffing side up.  Cook on high 1-2 minutes.  Repeat with remaining mushrooms.

Spinach Dip

1 pkg frozen spinach, cooked
1/2 cup chopped green onion or chives
2 cups mayonnaise
1/4 cup parsley
1/2-1 tsp mustard
salt and pepper


Mix. Chill.  Serve with bread or crackers.

Sausage Bites

1 lbs hot sausage
1 pkg (8oz) extra sharp cheddar cheese, grated
3 cups Bisquick


Mix cold and shape.  Bake at 350 for 10 minutes.

Salsa

1/2 cup tomatoes
2 T red onion
lemon juice
2 T parsley
2 T fresh mint

Delicious Chicken Wraps

1 rotisserie chicken, shredded
1/2 red onion diced
1 package cherry tomatoes, halved
1/2 cup cilantro
1 cup feta
2 avocados, diced
Juice of 1 lemon

Tortillas

Dressing:
1/2 cup lime juice
1/4 cup olive oil
1 tsp salt
1/2 tsp pepper

Sprinkle avocados with lemon juice.

Combine chicken through avocados in large bowl.

Mix dressing ingredients; pour over chicken mixture.

Spoon into tortillas, wrap up, and enjoy!

Buffalo Chicken Dip

8 oz. cream cheese, softened
1/2 cup Ranch salad dressing
1/2 cup any flavor FRANKS REDHOT Sauce
1/2 cup shredded mozzarella
1 can (9.75oz) SWANSON White Premium Chicken Breast, drained

Heat oven to 350 degrees. Place cream cheese into deep baking dish. Stir til smooth.

Mix salad dressing, Frank's RedHot Sauce and cheese. Stir in chicken.

Bake 20 mins. or until mixture is heated through; Stir. Serve with tortilla chips.

Lady and Sons Chicken Pot Pie

Ingredients

  • 4 sheets frozen puff pastry
  • 1 egg, beaten
  • 4 chicken breast halves, or 2 cups leftover cooked chicken
  • Seasoned salt and pepper
  • 2 tablespoons cooking oil
  • 1/3 cup butter
  • 2/3 cup all-purpose flour
  • 1 quart heavy cream
  • 1/4 cup chicken base
  • 1 tablespoon minced garlic
  • 1/2 small yellow onion, minced
  • 1 cup frozen green peas, cooked
  • 1 cup chopped cooked carrots
  • Pinch fresh grated nutmeg, optional
  • Special equipment: 4 (2-cup) individual baking dishes

Directions

Crust:

Preheat oven to 350 degrees F.

Cut each sheet of frozen puff pastry into 1-inch strips, 8 inches long. On a large cookie sheet, weave strips into a lattice large enough to cover each pot pie. Brush beaten egg onto each lattice square. Bake for 5 minutes, or until dough has risen and turned light golden brown. Set aside until ready to assemble pies. Leave oven on at 350 degrees F.

Filling:

Season chicken with seasoned salt and pepper. Heat oil in a large skillet over medium-high heat. Add chicken and saute until cooked through. Remove from heat and cut into chunks. Alternatively, you may use precooked chicken.

In a large saucepan, melt butter and then slowly add flour, stirring until consistency of peanut butter, but not brown like a roux. Slowly add cream and keep stirring. Add chicken base, garlic, and onion and stir until thickened. Add peas, carrots, nutmeg, if using, and cut up chicken. Remove from heat. Fill 4 individual oven-proof bowls with chicken mixture and then top each with a pre-cooked lattice square. Bake for 5 minutes or until bubbly. Any remaining pie filling may be frozen.

Peanut Butter Brownie Trifle


Peanut Butter Brownie Trifle

1 9X13 pan of your favorite brownie recipe with 10 ounce bag of peanut butter chips mixed in
5 ounce package vanilla instant pudding mix
3 cups milk
1/2 cup peanut butter
2 teaspoons vanilla extract
1 cup whipping cream, whipped and divided
24 regular sized peanut butter cups, divided

Cut or crumble brownies;set aside. Coarsely chop peanut butter cups; reserve 1/4 cup for garnish.

Combine pudding mix and milk in large bowl. Beat at low speed for 2 minutes or until thickened. Add peanut butter and vanilla; beat until smooth. Gently fold in half of whipped cream.

Place half of brownies in bottom of trifle bowl; top with 1/2 of chopped candy and half of pudding. Repeat layers. Top with remaining whipped cream, spooned or piped on. Garnish top with remaining peanut butter cups.

Pesto Chicken Stuffed Shells


Pesto Chicken Stuffed Shells

12-16 jumbo pasta shells water for boiling pasta
4oz cream cheese, softened
1 cup freshly grated Parmesan or Asiago cheese + 1/4 cup for topping
3 tablespoons prepared pesto (homemade or store bought)
2 cups shredded cooked chicken
2 cloves garlic, minced
salt and pepper to taste

In a large pot over high heat, boil water and prepare pasta shells as directed on package. Cook pasta shells only until al dente. The pasta will finish cooking when the dish is baked. Drain the pasta shells and set aside.

In a large bowl, combine the rest of the ingredients, except the 1/4 cup of cheese for the topping. Fill the pasta shells with the filling and place in a baking dish. Sprinkle the remaining 1/4 cup of cheese over filled shells.

Preheat oven to 350 degrees and bake shells uncovered for 30 minutes or until shells are bubbling hot and cheese melts.

Balsamic Honey Chicken Kabobs

1 lb chicken
2 TBSP balsamic vinegar
2 TBSP worcestershire sauce
1-2 tsp onion powder (or salt)
2 TBSP honey, warmed for easier blending
1 tsp pepper
2 garlic cloves, minced
1 tsp fresh grated ginger root
1 TBSP oil
Sesame Seeds



Cut chicken into bite-sized pieces and put into ziploc bag. Combine balsamic vinegar through oil and put in bag with the chicken. Marinate for 2 hours.


Remove chicken from marinade and skewer. Grill until done. Brush with additional honey and sprinkle with sesame seeds.

Cream Cheese Banana Bread

Ingredients:

3/4 cup butter, softened
1 8 oz pkg cream cheese, softened
2 cups sugar
2 eggs
3 cups flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 1/2 cups mashed bananas (about 4 medium)
1/2 tsp vanilla
1 cup chopped pecans (I don't add these)

Preheat oven to 350 degrees. Grease and flour two 8x4 loaf pans.
In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs and beat until just blended.
Combine flour, baking powder, baking soda, salt, and spices; gradually add to butter mixture just until blended. Stir in bananas, pecans, and vanilla. Spoon batter into prepared loaf pans.
Bake for 1 hour or until toothpick comes out clean. Cool in pans for 10 minutes.

Weight Watchers Sugar cookies


COOKIES:
1 1/2 cups all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. ground nutmeg
2/3 cup granulated white sugar
1/4 cup butter, at room temperature
1 large egg white
3/4 tsp. vanilla extract
1/4 cup reduced-fat sour cream

ICING:
1/2 cup powdered sugar
1 Tbsp. water
1/2 tsp. vanilla extract
food coloring, optional
colored sugar, optional

1. Whisk together flour, baking powder, salt and nutmeg in a medium bowl. In a larger bowl, use electric mixer to blend together sugar and butter until light and fluffy. Beat in egg white and vanilla, scraping the sides of the bowl as needed. Add flour mixture and the sour cream alternately, beginning and ending with the flour mixture and beating just until blended. Shape dough into a disk and wrap with plastic wrap. Refrigerate for at least 1 hour.

2. Preheat oven to 350 degrees F. Line baking sheets with silicone mats or parchment paper (or spray with nonstick spray).

3. On a lightly floured surface, roll the dough to a thickness of 1/4-inch. Using a 2-inch cookie cutter (I used a heart, but you can use any shape), cut out the cookies re-rolling the scraps to make a total of 28 cookies. Place cookies 1-inch apart on baking sheets.

4. Bake until cookies are very lightly browned at the edges, 12 to 14 minutes. Transfer cookies to a rack and cool completely.

5. Prepare icing: In a small bowl, whisk together powdered sugar, water and vanilla. Add coloring, if using. Use a spoon to drizzle icing over the cookies. Add decorative sugar, if desired.

Yield: 28 cookies

Rustic Italian Chicken Recipe

1 lb Chicken Breast
1 Red Bell Pepper
1 Green Bell Pepper
4 oz. Mushrooms
1 Small Yellow Onion
5 Small Red Potatoes, halved OR 1 Large Russet cubed, 1 inch
2 Carrots, cut up into roughly 1-2 inch pieces
1 Large can Diced Tomatoes
5 cloves of garlic, finely minced
packet of Italian Seasoning

Mix tomatoes with garlic and italian seasoning.

Load up your crock pot with the chicken on the bottom then the veggies and then pour the tomato mixture over everything. Low and slow for about 4 hours. I serve this either in a bowl with crusty french bread alongside or over whole wheat pasta.

Chicken Enchiladas

Ingredients

  • 3 tablespoons vegetable oil
  • 1 1/2 pounds skinless boneless chicken breast
  • Salt and pepper
  • 2 teaspoons cumin powder
  • 2 teaspoons garlic powder
  • 1 teaspoon Mexican Spice Blend
  • 1 red onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen corn, thawed
  • 5 canned whole green chiles, seeded and coarsely chopped
  • 4 canned chipotle chiles, seeded and minced
  • 1 (28-ounce) can stewed tomatoes
  • 1/2 teaspoon all-purpose flour
  • 16 corn tortillas
  • 1 1/2 cups enchilada sauce, canned
  • 1 cup shredded Cheddar and Jack cheeses
  • Garnish: chopped cilantro leaves, chopped scallions, sour cream, chopped tomatoes

Directions

Coat large saute pan with oil. Season chicken with salt and pepper. Brown chicken over medium heat, allow 7 minutes each side or until no longer pink. Sprinkle chicken with cumin, garlic powder and Mexican spices before turning. Remove chicken to a platter, allow to cool.

Saute onion and garlic in chicken drippings until tender. Add corn and chiles. Stir well to combine. Add canned tomatoes, saute 1 minute.

Pull chicken breasts apart by hand into shredded strips. Add shredded chicken to saute pan, combine with vegetables. Dust the mixture with flour to help set.

Microwave tortillas on high for 30 seconds. This softens them and makes them more pliable. Coat the bottom of 2 (13 by 9-inch) pans with a ladle of enchilada sauce. Using a large shallow bowl, dip each tortilla in enchilada sauce to lightly coat. Spoon 1/4 cup chicken mixture in each tortilla. Fold over filling, place 8 enchiladas in each pan with seam side down. Top with remaining enchilada sauce and cheese.

Bake for 15 minutes in a preheated 350 degree F oven until cheese melts. Garnish with cilantro, scallion, sour cream and chopped tomatoes before serving. Serve with Spanish rice and beans.

Roasted Vegetables

Ingredients



4 spray(s) olive oil cooking spray, divided
2 medium sweet red pepper(s), cut into 8 thick strips
1 medium green pepper(s), cut into 8 thick strips
1 medium yellow summer squash, cut thickly on the diagonal
1 medium zucchini, cut thickly on the diagonal
1 medium red onion(s), cut into large wedges
12 oz canned artichoke hearts, without oil, drained and halved

1 Tbsp thyme, fresh, fresh, minced

1/2 tsp table salt, or to taste

1/4 tsp black pepper, freshly ground, or to taste

Instructions

  • Preheat oven to 450ºF. Coat 2 large baking sheets with cooking spray.

  • Arrange peppers, squash, zucchini, onion and artichokes on prepared baking sheets and coat with cooking spray; sprinkle with thyme, salt and black pepper.

  • Roast until vegetables are tender and golden brown, shaking pan once or twice during cooking, about 25 to 30 minutes. Yields about 3/4 cup per serving.

Potato Salad

Ingredients


1 1/2 pound(s) uncooked red potatoes

3 slice(s) uncooked turkey bacon

1/4 cup(s) reduced-calorie mayonnaise

2 Tbsp red wine vinegar

2 Tbsp parsley, fresh, chopped

1/2 tsp table salt

1/4 tsp black pepper, freshly ground
1/2 cup(s) scallion(s), chopped

Instructions

  • Place whole potatoes in a large saucepan and pour in enough water to cover them; set pan over high heat and bring to a boil. Reduce heat to medium and simmer until potatoes are fork-tender, about 20 to 30 minutes; drain. When potatoes are cool enough to handle, slice each into eight pieces.

  • Meanwhile, cook bacon in a hot skillet or in the microwave until crisp; drain on paper towels. Break bacon into small pieces.

  • In a small cup, combine mayonnaise, vinegar, parsley, salt and pepper.

  • Tranfer cut potatoes to a large bowl; add bacon and scallions. Toss with dressing until coated. Yields about 3/4 cup per serving.

Filet Mignon with Red Wine Sauce

Ingredients



3 spray(s) cooking spray
8 oz Beef, filet mignon, trimmed, raw, washed and patted dry (use two 1/4 lb pieces)

1/2 tsp table salt

1/2 tsp black pepper, freshly ground

6 Tbsp wine, red, such as Burgundy or Bordeaux

1 tsp unsalted butter

1/2 Tbsp chives, or parsley, fresh, chopped
1/2 pound(s) asparagus, trimmed, steamed or roasted

Instructions

  • Coat a grill pan (with sides) with cooking spray; set pan over medium-high heat.

  • Rub salt and pepper all over steak. When pan is hot, cook steak for about 4 minutes without flipping. Flip steak and cook for about 4 to 6 minutes more for medium doneness.

  • Remove steak to a cutting board and loosely cover with aluminum foil; let rest for at least 10 minutes (steak will continue to cook under foil).

  • While steak is resting, pour wine onto grill pan; increase heat to high. Reduce liquid by about 75%, scraping bottom and sides of pan while sauce is boiling (the thicker the sauce, the more the flavor it will have), about 2 to 4 minutes. If any juice has seeped out of steak while it’s resting, add it to grill pan. Once sauce is reduced, add butter to pan; cook until just melted.

  • Very thinly slice steak against grain and place on plates; drizzle with sauce. Garnish with chives or parsley and serve with asparagus. Yields about 3 1/2 ounces steak, 1 tablespoon sauce and 1/2 of asparagus per serving.

Sweet Party Mix


Ingredients

  • 1 (12 ounce) package crispy corn and rice cereal
  • 5 ounces slivered almonds
  • 6 ounces toasted, chopped pecans
  • 3/4 cup butter
  • 3/4 cup dark corn syrup
  • 1 1/2 cups light brown sugar

Directions

  1. Preheat oven to 250 degrees F (120 degrees C). Lightly grease a large roasting pan.
  2. In a large bowl, mix crispy corn and rice cereal, slivered almonds and toasted, chopped pecans.
  3. In a medium saucepan over medium heat, melt the butter and mix with dark corn syrup and light brown sugar. Pour the mixture over the crispy corn and rice cereal mixture. Stir and shake to coat all the nuts and cereal.
  4. Pour the coated mixture into the prepared roasting pan. Stirring approximately every 15 minutes, cook 1 hour in the preheated oven. Cool on wax paper, and store in airtight containers.

Smoky Maple-Rubbed Salmon

4 medium sweet potatoes (about 5 oz each) scrubbed and patted dry
4 pieces salmon fillet (about 6 oz each)
4 teaspoons McCormick Grill Mates Steakhouse Maple seasoning
1 large bundle kale (about 1 pound), rinsed, cut into 2 inch pieces and rough ends removed
2 tablespoons olive oil
4 cloves garlic, peeled and smashed
1/4 teaspoon salt
1/8 teaspoon red pepper flakes

Heat oven to 450 degrees. Line a 9x13 baking dish with foil. Place sweet potatoes on a baking sheet and bake at 450 for 45 minutes or until tender.

Meanwhile, place Salmon fillets, skin-side down, in the prepared baking dish. Sprinkle 1 teaspoon of the seasoning evenly over each fillet. After sweet potatoes have baked 25 minutes, place Salmon in oven and bake 15 to 20 minutes or until fish flakes easily.

While potatoes and salmon are baking, prepare kale. Heat oil in a large nonstick skillet. Add garlic and cook 1 minute, until golden. Add kale, salt, and red pepper and cook 10 minutes, stirring occasionally, until tender.

Cajun Spiced Roast Pork

1 tablespoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon cayenne
1 (1 pound) prok tenderloin, trimmed

Preheat oven to 400 degrees. On a sheet of wax paper, combine the paprika, cumin, sugar, salt, and cayenne. Roll the pork in the mixture until evenly coated.

Spray a large ovenproof skillet with nonstick spray and set over medium-high heat. Tuck the thin end of the tenderloin under so it is an even thickness and place in the skillet. Cook until lightly browned on all sides, about 5 minutes.

Transfer the skillet to the oven and roast until an instant read thermometer inserted into the center of the tenderloin registers 160 degrees for medium, about 20 minutes.

Transfer the pork to a cutting board and let stand 10 minutes. Cut into 16 slices.
